Apple Onion Jam Sweet Potato Stack
1 Tbs. Kerrygold butter
1/2 yellow sweet onion, finely chopped
1 small honey crisp apple, finely chopped
1/4 cup red wine vinegar
sea salt and pepper
1 large sweet potato (about 10 oz), peeled and chopped
1 Tbs. Kerrygold butter
1/4 tsp. Meyer Lemon Salt
Bring a large pot of water to a boil.
Add sweet potato chunks. Cover and cook until soft, about 30 minutes.
Drain.
Add butter and lemon salt.
Mash until somewhat smooth.
Using two greased biscuit cutters on a parchment-lined plate, “stuff” each biscuit cutter with the mash.
Allow to cool before removing the outer ring to reveal your sweet potato stacking steps.
Meanwhile, melt the remaining 1 Tbs. butter in a medium skillet.
Add onions and apples, along with salt and pepper.
Sauté well.
Keep stirring to allow for proper caramelization of the sugars.
Keep stirring. And stirring. Do not give up hope – this will take a while. After about 10-15 minutes, pour in the vinegar and turn the heat up to medium-high. Stir again, and again, and again, until the vinegar reduces – about another 10 minutes.
Now, the jam is done.
Layer one sweet potato step atop another and spoon over the stacks the amazingly aromatic jam you’ve created.
Serve with grilled chicken, burgers, goat cheese, or nothing at all for a “meatless Monday” – or Wednesday, in this case. Enjoy.
