Chunky Cilantro Mint Macadamia Pesto
1/2 cup chopped macadamia nuts
1 cup loosely packed cilantro
1/2 cup loosely packed basil leaves
1/4 cup loosely packed mint leaves
1/4 cup extra virgin olive oil
1/4 cup grated parmesan cheese
juice of 1 lime
1/4 tsp. sea salt
Combine all ingredients in a high-speed blender and purée until slightly chunky, but mostly smooth.
