Spinach Garbanzo Peanut Puffs
1 1/4 cups canned garbanzo beans (chickpeas) rinsed and drained
1/2 cup + 1 Tbs. all-natural, fresh-ground peanut butter
1/2 cup cooked spinach (frozen and thawed is fine)
1 tsp. baking powder
1/4 tsp. sea salt
Preheat oven to 350 degrees.
Combine all ingredients in the large bowl of a food processor and whir until smooth.
Form into 1″ diameter balls and bake for about 15 minutes, until puffy and delightful.
Serve with a drizzle of melted peanut butter and salt, or alongside roasted veggies and chicken for a push of protein.
