Oatmeal Cinnamon Raisin Cookies
2/3 cup white sugar
2/3 cup dark brown sugar, firmly packed
12 Tbs. butter, softened
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. vanilla extract
1/2 tsp. baking powder
1/2 tsp. sea salt
2 large eggs
1 cup old-fashioned oats
1 2/3 cups all-purpose flour
1 cup raisins
Preheat oven to 375 degrees.
In a large bowl, beat all ingredients except oats, flour, and raisins with an electric mixer on medium speed, or mix with a spoon. Stir in oats, flour, and raisins.
Drop dough by rounded tablespoonfuls about 2 inches apart on a parchment or Silpat-lined cookie sheet.
Bake for 9 – 11 minutes or until light brown. Immediately remove from cookie sheet to cooling rack.
