Vanilla Lemon Thyme Goat Cheesecake Shooters 

1 sleeve graham crackers, finely processed
4 Tbs. melted butter

8 oz. cream cheese, softened
4 oz. fresh goat cheese, softened
3/4 cup white sugar
juice and zest of 1 lemon
2 tsp. lemon extract
1 Tbs. fresh thyme
1/4 cup chopped walnut pieces

 

Combine the graham cracker crumbs and melted butter. Toss until fully incorporated. 

Fill 8-10 shooter glasses 1/3 of the wall full with this “crust.”

 

Whip together the cheeses, sugar, lemon juice and zest, and vanilla until silky smooth. Fold in the thyme.


Fill the remaining 2/3 of the glasses with the lemon thyme mixture and top with walnuts.
