Summer Peach Cobbler
8 fresh peaches, pitted and cut into 1″chunks
¼ cup apple butter
¼ cup brown sugar
2 tsp. cornstarch
1 cup all-purpose flour
¼ cup white sugar
¼ cup brown sugar
1 tsp. baking powder
½ tsp. salt
6 Tbs. butter, chilled and chopped into small pieces
2 Tbs. heavy cream
1 tsp. ground cinnamon
Preheat oven to 425 degrees.
In a large bowl, combine peaches, apple butter, ¼ cup brown sugar, and cornstarch.
Toss to coat evenly. Pour into a large baking dish.
Bake for 10 minutes.
Meanwhile, in a large bowl, combine flour, ¼ cup white sugar, remaining 1/4 cup brown sugar, baking powder, salt, and cinnamon. Blend in butter with fingertips until the mixture becomes beady and then like a coarse meal. Stir in cream until just barely combined.
Remove the peaches from the oven after 10 minutes.
Drop spoonfuls of the topping over the cooked peaches. Sprinkle with additional cinnamon and sugar, if desired. Bake until the topping is bubbly and golden, about 25-30 minutes.
Serve a la mode.
