Minted Pea Soup
2 Tbs. butter
1/4 small sweet onion, diced
3 cups shelled green peas (thawed, if frozen)
2 cups vegetable broth
1/4 cup fresh mint leaves
1/2 cup heavy cream
sea salt and pepper
crumbled feta cheese
Heat the butter over low heat and add the onion, sautéing until golden brown.
Transfer to a high-speed blender along with the peas, broth, mint, and salt and pepper.
Puree until smooth.
Drizzle in the cream and process until fully emulsified.
Serve topped with fresh feta crumbles.
