Sweet & Savory Meatloaf



With just a touch of honey and plenty of sweet, earthy carrots, this meatloaf is an amazing alternative to the classic recipe.

Sweet & Savory Meatloaf

1 lb. lean ground beef
1 cup chopped carrots
tsp. olive oil
2 large eggs
1 cup grain-free croutons
2 Tbs. tomato paste
1 Tbs. honey

sea salt and pepper
1 tsp. steak seasoning

 

Preheat the oven to 375 degrees.


Heat the olive oil over medium heat and sauté the carrots, with a little salt and pepper, until soft and caramelized.


Allow the carrots to cool and then add to a bowl with the ground beef, eggs, croutons, tomato paste, honey, salt and pepper, and steak seasoning.


Mix well with your hands.


Grease the inside of a small loaf pan and press the mixture inside.


Bake for about 40 minutes, until bubbly and brown.
