Chocolate Chip Cookie Surprise Cake
After discussing the open-armed reception of last week’s Chocolate Peanut Butter Surprise Cake, a new idea was brought to my attention:
“What if you did a cookie dough frosting, and then, like had cookie dough or cookies inside?”
Wham, bam, fantastic idea!
Mission accomplished – happy tummies and big smiles all around.
Chocolate Chip Cookie Surprise Cake
Chocolate Cake:
2 cups sugar
1¾ cups all-purpose flour
¾ cup unsweetened cocoa powder
1½ tsp. baking powder
1½ tsp. baking soda
1 tsp. sea salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
1½ tsp. vanilla extract
*Chocolate Chip Cookie Dough Frosting (recipe below)
**Chocolate Chip Cookie Minis (recipe below)
Preheat oven to 350.
Grease and flour three 6-inch pans.
Stir together all dry ingredients in a large bowl.
Add eggs, milk, oil, and vanilla and beat on medium speed until well incorporated.
Pour batter into prepared pans.
Bake for 30 to 35 minutes or until a wooden pick inserted in the center comes out clean.
Cool in pans for 10 minutes. Remove cakes from pans to a wire rack and let to cool completely.
Using a biscuit cutter, create holes in the center of two of the tiers. Reserve the “hole” cake for another use or frost as cupcakes.
Slather a layer of Cookie Dough Frosting over one tier, top with another, frost, and then fill the cake with Chocolate Chip Cookie Minis.
Top with the final tier (the one without the hole) and frost the cake entirely with the Chocolate Chip Cookie Dough Frosting. Slice open and serve the surprise!
***Pro Tip: Freeze the cake layers overnight before frosting. It makes the process a whole lot easier!
*Chocolate Chip Cookie Dough Frosting:
1 cup salted butter, room temperature (2 full sticks)
1 cup powdered sugar
3/4 cup brown sugar
2-3 Tbs. milk
2 tsp. vanilla extract
1 cup all-purpose flour
1 cup mini chocolate chips
Using a stand or hand mixer, beat the butter until soft.
Sift in the powdered sugar, brown sugar, milk, and vanilla and continue mixing.
Slowly add the flour and beat until you reach a frosting consistency.
Fold in the mini chocolate chips.
**Chocolate Chip Cookie Minis
3 cups all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
2 eggs
1 1/2 cup sugar
1 cup brown sugar
1 1/2 tsp. vanilla extract
8 oz. dark chocolate chips
Preheat the oven to 350 degrees.
Whisk together the flour, salt, and baking soda in a medium bowl.
In another bowl, cream together the eggs, sugars, and vanilla.
Fold in the chocolate chips. Gradually fold in the flour mixture until fully incorporated.
Form into little mini balls. Bake on a parchment-lined cookie sheet for about 14 minutes.
Cool for 3-5 minutes and transfer to a cooling rack to set completely before noshing.
