Coconut Chocolate Chip Blondie Bites





My personality is such that I become hooked on one thing, and one thing alone. I become obsessed and driven to all ends – I’m a highly productive and motivated person, by the way. This manifests in many areas of my life, but also in food. 


I don’t do anything half-assed. Once I create a pattern, I’ll “pattern the hell out the habit” until I decide to change to something else or am forced to due to availability reasons.


Yes, this is getting rather personal.


Several years ago my drive centered around yummy homemade coconut bars from the local natural foods store. I ate them each and every day – for a long time.
I can’t remember why I stopped – whether it was a choice or for some reason coconut was no longer available…. In any case, I made my switcheroo to something of another shape and form.

Just recently, I visited that little food store again, and the corners of my mouth rose, and my chest began to flutter. The coconut bars peered at me from behind the register.

I smirked.

And then I decided to make my own.

These happen to be no-bake, gluten-free, and vegan (and you could make them “raw”) as well. But they also happen to be quite delicious.

Consider slathering with almond butter or peanut butter just for kicks. #onlymakeitbetter

Coconut Chocolate Chip Blondie Bites (or bars)

3 sticks vegan butter (OR use coconut oil), melted
2 cups coconut flour
1 cup agave nectar
1 cup vegan, gluten-free mini chocolate chips
1 tsp. vanilla extract

 

Toss together all ingredients until well-mixed and somewhat doughy.


Line a square baking dish with plastic wrap.


Press the dough-batter mixture into the lined pan. Cover with plastic wrap and refrigerate for several hours, until set.


Cut into bite-sized morsels or bars for a bigger appetite. 

 

And don’t forget that nut butter on top!!!
