Black Cherry White Chocolate Cheesecake






It’s not often (or at least I don’t think it is) that Black Cherry White Chocolate Cheesecake dessert ideas come up during an existential conversation.


But trust me, it does happen every so often. 
And it happened here.

 

As of late, I’ve been contemplating the meaning of life. Heavy, I know.
Seriously, though, what are we here for? What IS it all for?

Don’t worry, close family and friends, I have not lost my faith, direction, or values, I just sit and wonder WHY?

Are we here to work today, just for another day at work? Are we here to earn money to spend, save, or squander?

Are we here to journey on lavish (or not so lavish) vacations only just come right back to where we started?

I don’t think we are created for any of that.


I DO think we were intelligently created and designed, in all our complexity, flaws, and imperfections. We are quite perfect, really. 
But why?

Well, no matter how you choose to experience your world and your existence; no matter how you choose to respond or react to your environment, I have made a choice about my reason for living.

I’m here to help others. I truly believe my heart was created to make that of others smile. 


THAT is what makes me tick.
THAT is what gets me up in the morning.
THAT is what makes my own heart sing.

Your smile. Your glee. Your glance. And you’re divinity!

For now, go ahead and lick your lips, and then consume a yummy cherry cheesecake.


You can worry about why it has to do with your existence later ~ or not. 

Black Cherry White Chocolate Cheesecake

 

Crust:
1 sleeve Honey Maid Graham Crackers, processed to a fine crumb
8 Tbs. butter, melted

 

Preheat the oven to 425 degrees and line a cheesecake springform pan with parchment paper.


Mix together the cracker crumbs and melted butter and press into the cheesecake pan with a rubber spatula.


Bake for about 20 minutes, until the edges are just beginning to brown.
Allow to cool.

 

Black Cherry Layer:
12 oz. Bonne Maman Cherry Preserves
5 oz. Ghirardelli White Chocolate Chips, melted

Stir together the preserves and melted white chocolate until smooth and creamy. Spread over the layer of cooled crust.

 

White Chocolate Cheesecake Layer:
8 oz. cream cheese
8 oz. mascarpone cheese
5 oz. Ghirardelli White Chocolate Chips, melted

 

Whip all ingredients together until smooth and creamy.


Spread over the Black Cherry Layer.

 

Chill for several hours.

 

Release from the cheesecake pan and decorate with 8 oz. fresh or frozen (thawed and drained) black cherries.
