Broccoli Fennel Soup
Who says soup is only appropriate in the winter?

This Broccoli Fennel soup is a super easy way to add the aromatics of fennel and the nourishing green goodness of broccoli into your life. You can eat this every day! (Or, I could).
On a side note, I eat ALL my meals from a bowl, contained in the palm of my hand.
It’s safe, it’s nurturing, and it’s what I do.
Broccoli Fennel Soup
2 tsp. olive oil
1 bulb fennel, trimmed and sliced
4 cups chopped broccoli
1 tsp. lemon fennel salt
1/2 tsp. black pepper
2 cups vegetable broth
Heat the oil over medium heat in a large pot.
Add the fennel and salt and cook until caramelized.
Add the broccoli and stir until beginning to soften and bright green.
Add the pepper and broth and bring to a simmer for about 3 minutes.
Transfer to a high-speed blender and puree until smooth.
Garnish each serving bowl with a few fronds of fresh fennel.
