Chicken Pesto Sweet Potato Toasts
Remember when Avocado Toast was all the rage?
Well, I actually think it still is and should always be regularly consumed. C’mon … avocado on EVERYTHING!
Well, the latest trend in culinary pop culture is the “Sweet Potato Toast.”
Really, it’s just thinly sliced sweet potatoes, roasted to perfection, and then topped with anything and everything. You can do savory toast, sweet toast, or my very personal favorite, a mix of both sweet and savory with a whole lot of crunch!

It’s awfully savory – but it’s amazingly delicious in every way.
Chicken Pesto Sweet Potato Toasts
1 large white sweet potato
1 large chicken breast
sea salt and pepper
1/2 cup Pesto
1/4 cup shaved Parmesan cheese
Preheat the oven to 425 degrees.
Prick the sweet potato with a fork several times and microwave for 3 minutes.
Meanwhile, bake the chicken breast (after seasoning with salt and pepper) covered, for about 40 minutes. It should be moist, but still done.
Slice the potato into 1/4-1/2″ slices.
Top with a sprinkling of cheese, then pesto, then a slice of chicken, and then more cheese and pesto. Bake for an additional 5-8 minutes to melt the cheese.
Eat and devour while hot and toasty! (No fork necessary).
