Chocolate Chunk Walnut Cookies
Sometimes the best things are simple.
Super simple.
Chocolate chip (chunk) cookies with a few walnuts.
That’s it!
Chocolate Chunk Walnut Cookies
2 sticks butter, softened (grass-fed Kerrygold is the best)
2 large eggs
1 cup white sugar
1/2 cup brown sugar
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
3 cups all-purpose flour
2 cups dark chocolate chunks
1 cup walnuts, chopped
Preheat the oven to 350 degrees.
Cream the butter until fluffy, using a mixer.
Add the sugar, eggs, and cream again until really fluffy.
Add the vanilla, baking powder, baking soda, and salt and stir well. Add the flour in three different increments.
Fold in the chocolate chunks and walnuts.
Allow to “rest” for 15-20 minutes. The longer the dough sits before baking, the puffier and fluffier the cookies will be.
Line six cookie sheets (this makes six dozen cookies, so if you don’t have six sheets and three ovens, cook in batches) with parchment paper.
Scoop 1″ balls onto the cookie sheets and bake for about 12 minutes.
Remove from the oven and allow the cookies to cool on the sheet for about five minutes before transferring to a cooling rack to cool completely (or not).
Serve with a big glass of milk!
