Cilantro Lime Chicken Salad
Once again, the “secret” really IS in the sauce.
Roasted chicken is great. Baked sweet potatoes are amazing. Fresh green peas are always a winner. But, a homemade and simple Creamy Cilantro Lime dressing makes all the difference, in this case at least: Cilantro Lime Chicken Salad.
Cilantro Lime Chicken Salad
2 cups sweet potato, peeled, cooked, and diced into 1″ cubes
1 1/2 cups boneless, skinless chicken breast, cooked and shredded
1 cup frozen (or fresh) sweet peas, thawed
3/4 cup Creamy Cilantro Lime Dressing**
1/4 cup salted Marcona almonds
fresh cilantro
Toss together all the ingredients and serve at room temperature.
Oh, accompanied by a traditional margarita cocktail makes this all the better!
**Creamy Cilantro Lime Dressing:
1 large bunch fresh cilantro
1/2 cup plain, whole-milk yogurt
1 clove garlic, roasted and cooled
juice and zest of 2 fresh limes
1 tsp. honey
1/2 tsp. sea salt
1/3 cup extra virgin olive oil
1/2 jalapeƱo, seeded and diced
Combine all the ingredients in a blender and process until smooth.
