Cranberry Walnut Flax Cookie Dough Bites
Just another version of cookie dough bites – EVERYONE loves peanut butter balls (raw, gluten-free, grain-free, vegan, etc.) These are one and the same but no-baked with walnut butter, dried cranberries, and flaxseed meal instead.
Meanwhile, I’ll commiserate and continue to be frustrated with my computer app update that has discontinued my photo editor 🙁 Ugh!
Cranberry Walnut Flax Cookie Dough Bites
9 oz. smooth and creamy walnut butter
1 cup vegan cultured butter, room temperature
1/2 tsp. vanilla extract
4 cups powdered sugar
1 cup dried cranberries
3/4 cup ground flax seeds
Combine the walnut butter, vegan butter, and vanilla in a large bowl with a mixer and beat until fluffy.
Mix in the powdered sugar, just a little at a time, until well incorporated. Add the cranberries and ground flax.
Chill for 30 minutes.
Roll into balls (or scoop) and place on a parchment-lined pan and chill again for several hours.
