Lemon Orange Poppyseed Earl Grey Cake Cookies

I HAVE, in fact, and I’ll do it again!
What a great winter-time suggestion.
The fresh aromatics of citrus fruit and poppyseed, paired with the citrus-orange bergamot essence of Earl Grey tea truly is an amazing feat:

They are technically cookies – but are super cake-lake, fluffy, and puffy: think mini scones, but better 🙂 – AND, you CAN enjoy them with a spot of Earl Grey tea.
Lemon Orange Poppyseed Earl Grey Cake Cookies
8 Tbs. butter, softened
1 cup white sugar
1 large egg
zest and juice of 1 fresh lemon
zest and juice of 1 fresh orange
1/2 cup very strongly brewed Earl Grey tea (very strong)
1 tsp. vanilla extract
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. sea salt
2 1/3 cups all-purpose flour
2-3 Tbs. poppyseeds
Preheat the oven to 350 degrees.
Beat together the butter, sugar, egg, juices and zest, and tea, until light and fluffy.
Beat in the vanilla, baking soda, baking powder, and salt.
Then, stir in the flour and poppyseeds until well combined.
Chill the dough for 15-20 minutes
Line two cookie sheets with parchment paper and place 1″ spoonfuls of dough on the parchment.
Bake for about 15 minutes, until nice and puffy.
