Gluten-Free Peanut Butter Pistachio Chocolate Honey Cookie Bars





Yup. We’ve got peanut butter and chocolate together again.


Only because it’s the most delicious marriage of flavor both in heaven and on earth.


And, this time we have the addition of salty pistachios and sweet honey, baked into a gluten-free cookie bar.

Gluten-Free Peanut Butter Pistachio Chocolate Honey Cookie Bars

 

2 cups all-natural smooth peanut butter
1/2 cup butter, room temperature
1 cup raw honey
3 large eggs
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
1 1/2 cups Pamela’s Artisan Gluten Free Flour Blend
2 cups dark chocolate chunks
1 cup pistachios, shelled

 

Preheat the oven to 375 degrees.


Using a stand mixer, beat together the peanut butter, butter honey, and eggs, until light and fluffy. 

 

Add the vanilla, baking soda, baking powder, and sea salt. 

 

Beat again until well combined.


Slowly add in the flour and mix until the texture of a wet cookie dough.

 

Line an 8×8″ pan with parchment paper and press half the dough evenly into the bottom of the pan.


Top with the dark chocolate and pistachios.


Spread the final half of the peanut butter cookie dough over the top.

 

Bake for 35-40 minutes, until the top is golden brown.

 

Remove from the oven and cool for several hours before slicing.
