Meatball Noodle Soup
It’s easy. It’s fairly quick. It doesn’t involve a lot of ingredients.
It’s tasty. It’s filling. And it’s comforting.
We ALL need a little extra dose of comfort in our lives right now: Meatball Noodle Soup.
Meatball Noodle Soup
2 Tbs. olive oil
1/2 cup onions, diced
1/2 cup fresh tomatoes, diced
fresh parsley, minced
sea salt and pepper
Homemade Italian Meatballs, unbaked
4 cups beef broth
1/4 tsp. red pepper flakes
3 oz. noodles (spaghetti, angel hair, rotini, etc.)
Heat the oil in a large skillet over medium heat.
Add the veggies, salt, and pepper and sauté until the onions begin to soften.
Add the meatballs and sear on all surfaces.
Pour in the broth and bring to a boil.
Add the noodles and cook until the noodles are soft and the meatballs are completely cooked through.
Top with fresh or dried basil.
