Spicy Collards, Rice, & Sausage
Harissa means spicy. It also means yummy – in my vocabulary. It’s a spice mix that’s quite flavorful and aromatic with a touch of kick, but one that’s not too overwhelming. And, when cooked with collard greens and fragrant Jasmine rice, alongside some spicy sausage (meat or plant-based), a magical amalgamation takes place for the sight and the senses: Spicy Collards, Rice, & Sausage.
Spicy Collards, Rice, & Sausage
Harissa Spice Blend:
1 Tbs. sesame seeds
1 tsp. ground cumin
1 tsp. ground caraway seeds
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. ground black pepper
1 tsp. ground coriander seed
1 tsp. ground fennel seed
1 tsp. smoked paprika
1/4 tsp. ginger powder
1/4 tsp. sea salt
Mix together all spices and transfer them to a sealed jar for storage.
1 Tbs. olive oil
1 Tbs. Harissa Spice Blend
2 cups fresh collard greens
1 cup Jasmine rice
2 cups water
2 spicy sausage links, cooked
Heat the oil in a medium pot and add the spice blend as well as the collard greens.
Cook until tender.
Add the rice and sauté until crispy.
Add the water and bring to a boil.
Reduce to a simmer, cover, and cook for about 15 minutes, until the rice is done.
Slice the cooked spicy sausages (seared on all sides- either meat-based or vegan) and serve with the spicy collards and rice!
