Rainbow Superfoods Salad




One of the great things about eating a “rainbow” on a daily basis, incorporating all the colorful produce and superfoods I can into my diet, is that I end up with a colorful rainbow bouquet sitting on my refrigerator shelves.


And, with that smorgasbord of color, I can toss, turn, and stir any type of rainbow superfood salad any time of the day.

So, today I did just that: kale, cabbage, bell pepper, blueberries, carrots, corn, quinoa, edamame, cashews, and a super spicy superfoods dressing:
Rainbow Superfoods Salad.


It tastes amazing and you’ll feel amazing!



Rainbow Superfoods Salad

Rainbow Salad:
1 small handful of kale, chopped 
1 handful red cabbage, sliced
1/2 red bell pepper, seeded and diced
1 handful fresh blueberries
1 handful shredded carrots
1/2 handful corn
1 cup quinoa
1/2 cup edamame
1/2 cup raw cashews

 

Superfoods Dressing:
2/3 cup olive oil
1/3 apple cider vinegar
2 tsp. Dijon mustard
1 tsp. raw honey or maple syrup
1/2 tsp. Himalayan sea salt
1/4 tsp. freshly ground pepper

 

Combine all the dressing ingredients into a jar with a tight-fitting lid. Cover and shake vigorously.

 

Toss all ingredients for the salad together, adjusting your preferred amounts. Pour over a generous amount of dressing and toss again!

Watch the unicorns and rainbows dance before your very eyes. 🦄🌈😍
