Apple Gouda & Salmon Salad
With the weather being the way it is, even though I adore a warm, nourishing bowl of food each day, sometimes a nice salad (cool or room temperature) suits my fancy.
Wild salmon is so difficult to find – GOOD wild salmon, I should say, that when I see it, I grab it and take full advantage of the yumminess and the health encyclopedia advantages.
Plus, an amazing, aged Gouda cheese? Good god, save me now!

Apple Gouda & Salmon Salad
1 large salmon filet
sea salt and pepper
1 Tbs. extra virgin olive oil
1 cup red cabbage, finely chopped
1 cup green cabbage, finely chopped, or shredded
3 springs green onion, finely sliced
sea salt and pepper
1/4 cup dried apple chips
2 Tbs. toasted sunflower seeds
4 oz. extra dry aged Gouda cheese (Reserve), finely chopped
After seasoning the salmon filet with salt and pepper, grill or broil until crispy.
Set aside.
Meanwhile, heat the oil in a large skillet over high heat.
Add the veggies and salt and pepper.
Sauté until soft.
Remove from heat.
To serve, portion out the cooked veggies and then sprinkle with the apple chips and sunflower seeds.
Top with the cooked salmon and then surround with the aged Gouda.
