Beet Bacon Blue Cheese Butter Lettuce Salad

Beet Bacon Blue Cheese Butter Lettuce Salad

 

1 cup baked baby beets, peeled
1 cup baby butter lettuce leaves
1/4 cup blue cheese crumbles
1/4 cup cooked bacon, chopped (or EPIC Provisions Bacon Bites)
1 Tbs. extra virgin olive oil
sea salt and pepper

 

Toss all ingredients together in a large bowl.
