Basic Chocolate Chunk Cookies
Nothing exceptional here. Just the basics – back to the basics of everyone’s favorite chocolate chip cookie.
Well, I used dark chocolate chunks and a little extra sea salt to land on my “basic recipe,” but it was time to tame the encouraging voices in my head, spawning me towards new and different flavor combinations.
Sometimes, people simply desire and crave the familiar.
If ANYONE understands this concept, it should be and IS me!
Basic Chocolate Chunk Cookies
16 Tbs. Kerrygold butter (1 cup), softened
3 large farm fresh eggs
1 tsp. sea salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
1 cup brown sugar
1 cup white sugar
2 3/4 cup all-purpose flour
20 oz. dark chocolate chunks
Preheat the oven to 375 degrees.
Cream together the butter, eggs, salt, baking soda, baking powder, vanilla, and sugars, until light and fluffy.
Add the flour, 1/2 cup at a time, until thoroughly mixed, and not too dry.
Once combined, fold in all the dark chocolate chunks.
Line cookie sheets with parchment paper, scoop 1″ sized balls onto the parchment, and bake for 12-15 minutes, until golden brown.
Cool completely before transferring to a serving plate and cooking the next few batches.
Enjoy this classic cookie with a glass of ice-cold milk, or simply on its own while you fly and flit about to your next activity.
