Buttered Tomato Tortellini
Well, it may be a little bit of a “cheater” recipe, but it’s still really, really fantastic!
And homemade tortellini is so much work, right? So, we can now classify this as “an easy weeknight meal.”
Simply pick up some pre-made spinach tortellini from the refrigerated section of the market, some butter, and some heirloom cherry tomatoes. Add some sea salt and a lot of black pepper, and wham bam, you’ve got an amazing meal!!!
Buttered Tomato Tortellini
1 lb. spinach tortellini
4 Tbs. butter (yes, it’s a lot, but it’s worth it)
1 pint heirloom cherry tomatoes
sea salt
LOTS of fresh ground pepper
Bring a large pot of water to a boil.
Season with salt.
Boil the tortellini for 4 minutes.
Drain and set aside.
Meanwhile, melt the butter in a smaller pot over medium heat.
Add the tomatoes and cook down for about 20 minutes. Season with sea salt and pepper.
Pour the broken-down tomato sauce over the tortellini and top with additional black pepper.
