Raw Living Vegan Tacos



Wouldn’t it be great if we could all participate together in Taco Tuesday?


Well, it seems like that is already pretty much the case.
But, for raw food lovers who want to go beyond raw, riced cauliflower and tomatoes inside lettuce leaves, this Raw Living Vegan Taco meat recipe provides just the taste, crunch, protein, fat, and satisfaction that we all need in a taco! Bring on the tequila!!!

 

The secret to these raw taco tastes: sprouted nuts and sun-dried tomatoes!

 


Raw Living Vegan Tacos 

 

1 cup raw sunflower seeds (soaked and sprouted overnight, and then drained)
1 cup raw pecan pieces (soaked and sprouted overnight, and then drained)
1 cup oil-packed sun-dried tomato pieces (or dehydrated tomatoes soaked in oil marinade overnight)
1 Tbs. Mesquite Chili Powder*
1/4 tsp. dried oregano
1/4 tsp. dried cilantro
fresh cilantro

 

Combine all the ingredients in a food processor and pulse until chunky.

 

Serve with fresh cilantro over lettuce leaves, psyllium husk wraps, or anything and everything of your choice! 

 

How about topping with some raw cashew cheese? YUM!

 

*Mesquite Chili Powder:
1 Tbs. chili powder
1/2 tsp. mesquite powder
1/2 tsp. cinnamon
1/2 tsp. lemon peel (dried)
1/4 tsp. black pepper
1/4 tsp. smoked paprika
1/4 tsp. sea salt

 

Mix all spices together well and store in a tightly sealed container.
