Cinnamon Raisin Almond Butter Blondie Bars
Okay, so apparently, I need to amend my title. These really are NOT “blondie” bars.
A blondie (also known as a blonde brownie) is a rich, sweet dessert bar. It resembles the traditional chocolate brownie, but substitutes vanilla for the cocoa used in brownies, and contains brown sugar.
Blondies are made from flour, brown sugar, butter, eggs, baking powder, and vanilla, and may also contain walnuts or pecans. Blondies often contain white or dark chocolate chips, butterscotch chips, or other flavored chips.
But they are neither cookies nor brownies. They are bars – but flour-free and chocolate-free. So, what should I call them?
Squares of deliciousness?
Keto Almond Fat Bombs? (NO!!!! – I refuse to bow down to fad diets)
Whatever.
They are delicious and they are composed of cinnamon, raisins, almond butter, and eggs.
Cinnamon Raisin Almond Butter Blondie Bars
8 Tbs. butter, room temperature
2 cups cinnamon almond butter (OR 2 cups almond butter + 2 tsp. cinnamon + 1 tsp. vanilla extract)
3 large eggs
1 tsp. baking soda
1/2 tsp. sea salt
2 cups powdered sugar
1/2 cup evaporated milk
1 1/2 cup raisins
1 tsp. cinnamon
Preheat the oven to 325 degrees.
Cream together the butter, almond butter, eggs, baking soda, and sea salt.
Once mixed well, add the sugar and milk.
Mix until smooth.
Fold in the raisins and cinnamon.
At this point, the batter will be thick.
Transfer to a parchment-lined or greased 8×8″ baking pan and bake for at least one hour, until a toothpick inserted comes out clean.
Cool for several hours before slicing and EATING!!!! YUM! 😋
