Peanut Butter Chocolate Bar Crunch Cookies
I left the cookie dough out on the counter while I was running errands and at yoga and my husband sent me a text:
“Unrelated, sometimes the barometric pressure can make the cookie dough batch look like a few scoops are missing – that is simply a trick of nature. And, I’ve heard that a spoon of cookie dough is good on a Ritz cracker – just sayin’.”
And that’s how we roll.
This text made me SO happy.
SO happy.
My love language is food. (And as we all well know, baking cookies is my disease, so positive cookie feedback sends me into an over-the-top HIGH).
I don’t need drugs.
I just need to bake!!!
Peanut Butter Chocolate Bar Crunch Cookies
8 Tbs. butter, room temperature
2 cups smooth peanut butter
3 large eggs
1 cup powdered sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
1/2 tsp. sea salt
2 cups all-purpose flour
9 oz. GOURMET chocolate bars, broken into pieces
(Green & Black Dark, Hazelnut Currant, Milk, etc.)
Preheat the oven to 375 degrees.
Cream together the butter, peanut butter, and eggs until light and fluffy.
Add the sugar, baking soda, baking powder, vanilla, and salt.
Cream again for 1 minute.
Add the flour and mix well.
Next, add the broken pieces of chocolate bar and mix until even more broken and well combined.
Scoop 1″ balls onto parchment lined cookie sheets.
Flatten with the back of a juice glass and bake for 15-18 minutes.
Remove from the oven and bask in the “Oh my good god-ness” of these treats.
