Vanilla Cinnamon Cashew Butter Chocolate Chunk Cookies




Cashew butter is one of those luxuries I feel I will never take for granted – that and organic coconut butter. 


They are sweet, creamy, rich, luscious, and everything you’d ever want all at once and all on a spoon.


So, when baked into a dessert, the decadence is taken to an entire new level.


Now, we add a touch of cinnamon and vanilla and a whole lot of dark chocolate, and the cookies that are created are literally, “the best thing ever!”

 



Vanilla Cinnamon Cashew Butter Chocolate Chunk Cookies

8 Tbs. plant-based (vegan) butter
16 oz. Vanilla Cinnamon Cashew Butter*
3 large eggs
1 cup cane sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
2 1/4 cups all-purpose flour
20 oz. dark chocolate chunks

 

*Substitute 15 oz. cashew butter + 1 oz. coconut oil + 1 tsp. vanilla + 1/2 tsp. ground cinnamon

 

Preheat the oven to 375 degrees.

 

Cream together the butter, cashew butter, eggs, and sugar.


Once fluffy, add the baking soda, baking powder, and salt. 

Beat again.


Add the flour 1/2 cup at a time and then fold in the chocolate chunks.

 

Form into 1″ balls and place on parchment-lined baking sheets.


Bake for 12-15 minutes.

 

Remove from the oven. 

 

Cool for a few minutes and enjoy the ooey-gooey chocolatey goodness!
