Trail Mix Bread


It’s nourishing.

It’s warming.
It’s soft and chewy.
It’s a little crusty.
It’s slightly sweet, while mostly savory.
It’s hearty.
It’s delicious.
Oh, and it’s pretty darn easy.


It’s Trail Mix Bread!

 


Trail Mix Bread

1 1/2 cups warm water
1 1/2 tsp. dry active yeast

3 1/2 cups all-purpose flour
3 cups hearty trail mix (Harvest Medley)
1/2 cup sugar
1/4 cup vegetable oil
1 tsp. sea salt

 

In a large bowl, combine the water and yeast and allow the yeast to bloom for about 10 minutes.

 

Next, stir in the remaining ingredients, mixing WELL.


Form into a large dough ball and leave in the bowl.


Sprinkle with additional flour. Cover with a kitchen towel and let rise 2-3 hours in a warmish, well-ventilated area.

 

Preheat the oven to 425 degrees.

 

Once ready to cook, heat the oven for at least 30 minutes, so it’s super-hot.


Using flour dusted hands, for the dough ball into a boulé round to bake on a parchment lined cookie sheet, or line a bread loaf pan with parchment and transfer to that.

 

Bake for 30 minutes at 425 degrees, until the top is golden brown.

 

Reduce the oven temperature to 200 degrees and bake for an additional 30-40 minutes, until the dough is “done” inside.

 

Cool only slight before slicing and serving topped with butter or peanut butter!
