Coconut Chocolate Cherry Jam Bars
What can I say?
They are “like” Million Dollar Bars – but SO much better.
Forget the caramel.
Forget the sickly too sweet aftertaste.
Let’s introduce some subtle salty cocoa coconut crackers for the cookie crust, coconut almond butter, dark cherry preserves, and a topping of cocoa coconut and cinnamon – all toasted to perfection.
You’ll be in heaven. Trust me.
Coconut Chocolate Cherry Jam Bars
8 Tbs. butter, room temperature
2 pkg. Effie’s Coconut Cocoa Biscuits, finely processed into a crumb (divided)
3/4 cup white sugar
2 large eggs
1 cup all-purpose flour
1 cup Coconut Almond Butter
12 oz. Wild Cherry Preserves
1 cup toasted sweetened coconut flakes + 1/2 tsp. ground cinnamon
Preheat the oven to 425 degrees.
Cream together the butter, 1 1/2 cups of the Effie’s crumbs, sugar, and eggs.
Mix in the flour until well combined.
Line an 8×8″ baking pan with parchment paper.
Bake for 20-25 minutes, until fragrant and “done” like a big cookie.
Cook for about 10 minutes.
Warm the Coconut Almond Butter until nice and spreadable.
Drizzle over the cookie “crust,” covering all surfaces.
Cool again.
Slather the Cherry Preserves over the butter layer.
Next, mix the remaining Effie’s crumbs, the toasted coconut, and the cinnamon together.
Sprinkle over the top of the bars.
Chill for several hours before slicing and serving bites of heaven on earth!
