Double Dark Chocolate Peppermint Cookies
While the post seems late to the game, these little Double Dark Chocolate Peppermint Cookie gems (“Starlight” Cookies) were actually quite timely, in that I actually DID bake them Christmas morning 2020 – perfect for the holiday and perfect for the Stars of Bethlehem – remember that amazing phenomenal that ALSO occurred in 2020?
What a year.
What a cookie.
Bake this now and pretend you’re super prepared for a peppermint-condition Chocolate Valentine’s Day!
Double Dark Chocolate Peppermint Cookies
2 cups all-purpose flour
1 3/4 cup sugar
1 cup unsweetened cocoa powder
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. sea salt
8 Tbs. salted butter, room temperature
3 large eggs
1 pkg. Lady Godiva Dark Chocolate Peppermint Pudding
2 Tbs. cream
10 oz. dark chocolate chunks
1 giant peppermint candy cane (or about 8 Starlight Mints), broken into pieces
Preheat the oven to 350 degrees.
Sift together all the dry ingredients (minus the pudding powder and chocolate chunks) and set aside.
In a separate bowl, beat together the butter, eggs, and pudding powder until smooth and creamy.
Mix in the set-aside dry ingredients until well combined.
Fold in the cream and chocolate chunks.
Form into 1″ balls and place on parchment-lined baking sheets.
Flatten the dough balls with the back of a glass and then sprinkle with peppermint candy dust.
Bake for 15-20 minutes, until puffy and the candies are melted.
Cool and enjoy more and more the taste of winter and the coming of love!
