Spiced Vanilla White Chocolate Pecan Cookies
I was craving something sweet and spicy – dessert-wise, that is.
I’ve always been a fan of pumpkin spice, gingerbread spice, molasses, carrot cake – all the cinnamon-y goodness of sweet treats.
I even love to mix my sweetly spiced goods with savory: Chinese 5 Spice, Garam Masala, etc. (Indian food is one of my favs).
Thus, I opted for Spiced Vanilla White Chocolate Pecan Cookies this time around.
They were a neighbor(hood) favorite! 😋🤤😋
Spiced Vanilla White Chocolate Pecan Cookies
1 cup brown sugar
1/2 cup butter, room temperature
1/2 cup whole milk
2 eggs, room temperature
1 tsp. vanilla extract
1 pkg. Godiva Vanilla White Chocolate Pudding
2 tsp. baking powder
1/4 tsp. sea salt
1/2 tsp. ground ginger
2 tsp. pumpkin spice
1 1/4 cups all-purpose flour
10 oz. white chocolate chips
1 cup pecans, chopped
Preheat the oven to 350°F.
Cream together the sugar, butter, milk, and egg until light and fluffy.
Whisk in the vanilla extract and instant pudding.
Further mix the baking powder, salt, ginger, and pumpkin spice, until well combined.
Mix in the flour, 1/2 cup at a time.
Fold in the white chocolate and nuts.
Form into 1″ balls and place on parchment-lined baking sheets.
Flatten with the back of a juice glass and bake for 18-20 minutes, until just beginning to brown.
Remove from the oven and allow to cool before chomping down.
These cookies deserve, “Two YUMS Up! 😉”
