Honey Mustard Beef Sausage, Broccoli & Kraut Crunch
You can’t get stinkier than this one – well, maybe you can.
(I have a story of flying on a plane, cracking open a Tupperware full of smashed hardboiled eggs AND sauerkraut (with salt and pepper) – it was a very small commuter plane too – yes, I did that. Horrifying, but a delicious treat!)
Anyway, your house won’t smell THAT bad, but with onions, broccoli, kale, beef sausage bratwurst, AND sauerkraut all in the mix, the aromas are a little gnarly.
Yet, everything comes together and synthesizes into the most delicious treat on earth! (other than a meal of hardboiled eggs and kraut 😂🤣😂).
Honey Mustard Beef Sausage, Broccoli & Kraut Crunch
1 tsp. olive oil
1/4 white onion, finely chopped
1 small head of broccoli, broken into florets
3 beef bratwurst
4 leaves purple kale, chopped
1 tsp. dried thyme
1 tsp. paprika
sea salt and pepper
1/2 cup Honey Mustard Vinaigrette*
1/2 cup Wildbrine Green Sauerkraut
2 Tbs. hazelnuts, chopped
Heat the oil in a large pot until bubbly.
Sauté the onion until translucent.
Add the broccoli and cook until just beginning to soften.
Add the sausage. Cover and cook for several minutes.
Stir, cover again, and repeat, until the sausage has browned, but will be cooked through (poke to see).
After about 10 minutes, add the kale and seasonings.
Cook for 3-5 minutes to evenly coat and soften the kale.
Add the Honey Mustard Vinaigrette* and smother all surfaces.
Serve topped with the sauerkraut and chopped nuts.
So stinky – SO good!
*Honey Mustard Vinaigrette
1/4 cup olive oil
2 Tbs. stoneground mustard
1 Tbs. apple cider vinegar
1 Tbs. honey
sea salt and pepper
Whisk together all ingredients until smooth.
