Mediterranean Tahini Chicken



The Mediterranean diet is a diet inspired by the eating habits of Spain, Italy, and Greece in the 1960s and is said to be one of the healthiest ways of eating on earth. 

Loaded with lots of veggies and plenty of healthy fat, following the Mediterranean way of eating nourishes the body and the soul – after all, the MOST important part of eating the way the Spaniards, Italians, and Greeks eat is ENJOYING and taking your time with your food.

No matter what, Mediterranean, HERE I COME!

 


Mediterranean Tahini Chicken 

1 Tbs. olive oil
1 large sweet potato, peeled and chopped
2 large boneless, skinless chicken breasts
sea salt and pepper
1/4 tsp. crushed red pepper flakes
1/4 cup tahini
2 Tbs. fresh parsley
1 Tbs. fresh lemon juice
1/2 cup roasted red peppers, diced
1/4 cup Greek black olive, pitted
1 large green onion, sliced

 

In a large skillet, heat the oil over medium heat.


Add the sweet potato and chicken, seasoning with salt and pepper.


Cover and cook, stirring occasionally, for 10-15 minutes, until the chicken is cooked through and the taters are soft. 

 

Break apart the chicken with the back of a wooden or rubber spoon.


Add the red pepper flakes, tahini, parsley, and lemon juice, (as well as any additional olive oil, if needed) and stir well.

 

Plate and top with roasted red peppers, olives, and sliced green onion.
