Cold Japanese Kimchi Noodles
In Korea, cold noodles are extremely popular in the summer. Among many varieties of cold noodle dishes, naengmyeon (냉면) is at the top in popularity ranking!
This recipe is a take on the traditional cold Korean dish but uses the unique flavors of Japanese kimchi instead.
Cold Japanese Kimchi Noodles
4 oz. gluten-free buckwheat soba noodles
1 Tbs. gluten-free tamari
juice and zest of 2 fresh limes
1 ½ cups Wildbrine Japanese Kimchi
fresh cilantro
Bring a large pot of water to a rolling boil.
Add the soba noodles and cook until al dente.
Immediately rinse in ice-cold water and drain.
Chill in ice for several minutes, and then drain again.
Stir in the tamari, lime juice, and zest, and top with fresh cilantro.
*For a non-vegan option, serve with thinly sliced grilled steak.
