Probiotic Salsa Avocado Boats
A little “good belly” health with some probiotic salsa inside creamy, dreamy avocado?
Yes, please.
Feel free to dip a chip – or two. Or, even DOUBLE DIP!!!
Probiotic Salsa Avocado Boats
1-2 large avocados, mostly ripe, but still a little stiff
¾ cup Wildbrine Probiotic Salsa Rojo
¾ cup Wildbrine Probiotic Salsa Verde
fresh cilantro
ground pepper
2 Tbs. olive oil
6 4” coconut flour tortillas, thinly sliced (any tortilla “type” will work)
sea salt
lime juice
Slice the avocados in half and remove the pits. Score the inside of the fruits with a knife, forming into cube grids, reserving the rounded peels.
Carefully scoop out the cubes.
Mix the cubes of 1 avocado with the Salsa Rojo and the cubes of the other with the Salsa Verde.
Return each avocado-salsa mixture to the reserved empty halves of the avocados.
Top with fresh cilantro and freshly ground pepper.
Meanwhile, in a medium skillet, heat the olive oil over high heat.
Add the coconut flour tortilla strips, along with sea salt, stirring and sauteing until crisp and brown on all surfaces.
Serve the strips alongside the avocado boats as a Probiotic Salsa Avocado Boat Taco Salad.
