Chocolate Peanut Butter Chip Cookie Sandwiches with White Chocolate Buttercream
A sandwich cookie, also known as a sandwich biscuit, is a type of cookie made from two thin cookies or medium cookies with a filling between them. Many types of fillings are used, such as cream, ganache, buttercream, chocolate, cream cheese, jam, peanut butter, lemon curd, or ice cream.

Chocolate Peanut Butter Chip Cookie Sandwiches with White Chocolate Buttercream
Chocolate Peanut Butter Chip Cookies:
8 Tbs. butter, room temperature
2 large eggs
3/4 cup brown sugar
3/4 cup white sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla extract
1/2 tsp. sea salt
2 1/2 cups all-purpose flour
1 cup dark chocolate chunks
1 cup peanut butter chips
Preheat the oven to 375 degrees.
Cream together the butter, eggs, and sugar, until light and fluffy.
Add the baking powder, baking soda, salt, and vanilla. Cream again for 1-2 minutes.
Add the flour and mix well. Finally, fold in the chocolate and peanut butter.
Form into 1-1 1/2″ balls and bake on parchment-lined cookie sheets for 10-15 minutes, until golden brown and melty.
Meanwhile, make the Whipped White Chocolate Buttercream Frosting.
Once the cookies have thoroughly cooled, turn one upside down, slather with lots of frosting, and top with another cookie!
