Spicy Jalapeño Cilantro Cheddar Meatloaf
Meatloaf is sort of like an American classic comfort food. Kind of like steak and potatoes, Mac n’ Cheese, and grilled cheese with a tomato sandwich – oh, and a burger on a squishy bun.
This recipe for meatloaf, though, takes a slightly different direction from the tradition: spicy jalapeño ketchup, fresh cilantro, and cheddar cheese. Maybe like a “taco” loaf?
Spicy Jalapeño Cilantro Cheddar Meatloaf
1 lb. ground beef
1 lb. ground pork
8 oz. sharp cheddar cheese, grated
3 large eggs
1/4 cup Primal Foods Spicy Jalapeño Ketchup
1 sleeve saltine crackers, crumbled
1/4 cup fresh cilantro, finely chopped
sea salt and pepper
Preheat the oven to 375 degrees.
In a large bowl, mix together the meat, cheese, eggs, ketchup, cracker crumbs, cilantro, and salt and pepper.
Knead until very well combined.
Transfer to a parchment-lined, large loaf pan.
Bake for 45 minutes, or until the meat is done.
Remove from the oven after 30 minutes and drizzle with a few tablespoons of spicy ketchup.
Remove from the oven after continued baking with the ketchup garnish.
Cool for several hours before slicing and serving with your favorite, homemade pies – those that have a little cilantro-jalapeño kick!
