Berry Breakfast Bake



Let’s face it. We all desire something both tasty AND healthy each morning when we wake up.

After coffee or before (I’ll never know – I quit coffee years ago), the idea of something both sweet and savory is always on my mind.


I’m the Princess and the Pea, as well as Goldilocks and Cinderella (among other famous caricatures) all at once. 


I FEEL everything, KNOW exactly what I want, which must be perfect, and I’m sophisticatedly impatient.


I want it all.

 

Well, this super delicious Berry Breakfast Bake has it all, just for me.

 

Berries – not too sweet – perfect.


Nuts and seeds with LOTS of fiber and texture – dreamy.


Eggs – to “hold it all together” (we all know I struggle to hold it “all together” some days 
😂).
Warmth, nutrition, and the salt of the earth I need in each and every meal (don’t forget the crunch, as I always CRAVE a big bit out of life!)

Berry Breakfast Bake 

1 lb. fresh or frozen (thawed) mixed berries
2 cups berry nut trail mix
2 cups non-dairy milk
6 large eggs
2 Tbs. raw honey
1/4 cup gluten-free flour
1/2 tsp. ground cinnamon

 

Preheat the oven to 400 degrees.

 

Grease a large round or square baking dish with coconut oil or vegan butter.

 

Whisk together the eggs and non-dairy milk, until smooth and creamy.

 

Stir in the berries and trail mix.

 

Sift in the honey, flour, and cinnamon until well combined.

 

Transfer to the grease-lined or parchment-lined baking pan.

 

Bake for 45-50 minutes, until just about set inside and golden brown on top.

 

Remove from the oven and cool for several hours.

 

Scoop into bowls to serve, reheat, and even topped with additional plant-based milk, if desired.
