Kitchen Sink Granola



It is so freeing to me to clean out closets, cabinets, pantries, and the fridge. Honestly, I don’t keep a lot on hand, as I visit the grocery store nearly every day – to ensure everything is fresh and ready to go. And I purge my closet and cabinet fairly often too. I’m sort of a minimalist – except for designer shoes and Le Creuset. (BTW, I love gifts ðŸ™‚ ).

 

In any case, you know the phrase, “Everything but the kitchen sink?”


Yes, you do. I’ve referenced it many times before.


And it’s one of my favorite ways to cook. 


Raid the cupboard. Raid the fridge. Put it all in there and see how it goes.

 

That’s kind of the way this granola went.


I had nuts, I had oats, I had some dried fruit, and some sweets. Thus, homemade Kitchen Sink 

Granola: oats, coconut, pecans, pistachios, cashews, raisins, cranberries, cherries, and a hint of brown sugar.



Kitchen Sink Granola 

3 cups whole-grain oats
1 cup chopped pecans
1 cup chopped cashews

1/2 cup pistachios, shelled
1 cup raisins
1 cup dried cranberries
1 cup dried cherries
1 cup olive oil
1 cup brown sugar
1 cup coconut flakes


whatever you want…
everything BUT the Kitchen Sink!

 

Preheat the oven to 400 degrees.


Mix the oil and the sugar together in a large bowl. Then add all the other ingredients and mix WELL.

 

Spread the mixture out on a parchment-lined baking sheet and bake for about 45 minutes, stirring often.

 

Remove from the oven, stir, and allow to cool and dry out for several hours before serving. YUM!
