Steak & Craize Maize Fajita Strips
This is not your traditional fajita recipe.
No, it’s not.
The steak sirloin strips are definitely coated in a savory, spicy, fajita-ish seasoning –
But rather than muted in the outer banks of a flour tortilla, these specialized, sautéed steak strips are served right alongside (or among) Craize Sweet Corn (toasted corn) crackers.
These crackers are “extra thin” with a “bold crunch.”
Spicy steak + a toasty sweet, bold corn crunch + fresh cilantro = WINNER DINNER!

Steak & Craize Maize Fajita Strips
2 Tbs. olive oil
2 Tbs. Fajita Seasoning*
8 oz. bison (or beef) sirloin steak, COLD and thinly sliced
1/2 pkg. Craize Sweet Corn Toasted Corn Crackers
fresh cilantro
In a large skillet, heat the oil over medium heat.
Add the steak strips, coating with the seasoning mix, as well as stirring to coat with oil.
Brown all strips on one side (3-4 minutes).
Toss and sear the other sides of the strips (another few minutes).
Immediately remove from heat.
Plate and serve with toasted corn crackers and top with cilantro and any remaining pan juices.
A side of cilantro lime rice is an amazing addition.
*Fajita Seasoning:
2 tsp. chili powder
1 tsp. ground paprika
1 tsp. dried oregano
1 tsp. sea salt
1 tsp. sugar
1/2 tsp. ground cumin
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground black pepper
1/4 tsp. cayenne pepper
Combine all seasonings and mix well. Store in an airtight container.
