Coconut Almond Butter Chocolate Chip Cookies

I had a bad day.

All I could do to soothe myself: bake.

 

It worked, in a way.

Coconut Almond Butter Chocolate Chip Cookies 

1 1/2 sticks butter (or vegan butter), room temperature
1 cup raw (or roasted) almond butter
12 oz. sweetened condensed milk
3/4 cup brown sugar
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. sea salt
2 3/4 cups all-purpose flour
1 1/2 cups bittersweet chocolate chips
1 cup sweetened coconut shreds

 

Preheat the oven to 375 degrees.

 

Cream together the butter, almond butter, and sweetened condensed milk until smooth and fluffy.


Add the sugar, vanilla, baking soda, powder, and salt. Continue whipping until really fluffy.


Mix in the flour until well combined.


Fold in the chocolate and coconut.

 

Chill for 10 minutes.

 

Scoop 1″ balls onto parchment-lined baking sheets and bake for 13-14 minutes.

 

Remove from the oven and allow to cool, somewhat, before devouring.
