Mexican Grilled Cheese



Maybe this grilled cheese sammich doesn’t go with a bowl of creamy tomato soup – maybe it does – 

 

Maybe, rather than soothing, this version of your favorite comfort food is exciting and peps you up, with quite a kick from the spicy salsa, sharp cheddar cheese, and fragrant cilantro.

Maybe not.

 

Regardless of what this amazing sammy does for you and your soul – it will certainly please your taste buds!

 

Mexican Grilled Cheese: soft white bread (sourdough), sharp white cheddar, spicy salsa, and fresh cilantro. Y-U-M!




Mexican Grilled Cheese

4 slices sourdough bread
2 Tbs. butter
2 oz. sharp white cheddar cheese, sliced
2 heaping Tbsspicy salsa
1 1/2 Tbs. fresh cilantro, chopped
sea salt and pepper

 

Preheat a cast iron skillet to medium-high.


Butter one side of each slice of bread. 

 

Place the buttered side of one slice down in the skillet. 

 

Layer with cheese and salsa. Repeat. End with the last slice of buttered sourdough on top, buttered side up. Season with salt and pepper.


Flip with a spatula once the bottom begins to caramelize. 

 

A touch of char is a good thing. 

 

Once flipped, squash that puppy down with the back of the spatula “panini style.” Season, again, with salt and pepper.


Continue to cook until the cheese melts and both buttered sides are crispy and caramely.

 

Slice and savor – crispy and crunchy – like a Mexican taco!
