Blueberry Cashew Cluster White Chocolate Cookie Bars

Baked with vanilla sweet Blueberry Cashew Cluster “chunks,” creamy white chocolate, and sweetened condensed milk, these soft and chewy cookie bars are appropriate for any time of day and for any type of meal or snack. They are super – on the borderline of SUPERFOOD!

 

Blueberry Cashew Cluster White Chocolate Cookie Bars: a simple recipe of blueberry cashew clusters, white chocolate chips, and all the goodies for a fresh, egg-free, sweetened condensed milk cookie bar.




Blueberry Cashew Cluster White Chocolate Cookie Bars 

1 cup butter, room temperature (or shortening)
10 oz. sweetened condensed milk
3/4 cup white sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla extract
1/2 tsp. sea salt
2 cups all-purpose flour
16 oz. Blueberry Cashew Cluster Trail Bites
10 oz. white chocolate chips

 

Preheat the oven to 350 degrees.

 

Cream together the butter (or shortening), sweetened condensed milk, sugar, baking powder and soda, vanilla, and sea salt, until creamy.

 

Add in the flour, 1/2 cup at a time.


Once incorporated, blend in (electric mixer is best to break apart the “clusters”) the Blueberry Cashew Cluster Trail Bites. 

 

Once mixed in well, fold in the white chocolate chips.

 

Chill the dough for 30 minutes.

 

Line one large rectangular baking dish (or two square pans) with parchment paper. 

 

Spread the cookie dough evenly, across the pan.

 

Flatten.

 

Bake for 35-45 minutes, until golden brown on the edges.

 

Remove from the oven and cool for several hours before slicing and serving. YUM ðŸ˜‹
