Pumpkin Pecan Spice Bread

Pumpkin Pecan Spice Bread

 

1 3/4 cups all-purpose flour
1 tsp. baking powder
1 tsp. sea salt
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. ground nutmeg
1/8 tsp. ground ginger
2 large eggs
1/2 cup unsalted butter, melted
1 cup pureed pumpkin (canned)
3/4 cup white sugar
3/4 cup light brown sugar, loosely packed
2 tsp. vanilla extract
3/4 cup chopped pecans

 

Preheat oven to 350 degrees.

 

In a large bowl, mix together the flour, baking powder, salt, cinnamon, baking soda, nutmeg, and ginger.

 

In a separate bowl, whisk together the eggs, butter, pumpkin, sugars, and vanilla. Beat until smooth.

 

Combine the two bowls of ingredients, mixing well.

 

Fold in the pecans.

 

Grease a loaf pan with butter, or line with parchment paper.

 

Transfer the batter to the prepared loaf pan.

 

Bake for 50-60 minutes, until a toothpick inserted comes out clean.

 

Cool for at least 60 minutes before slicing and serving.
