Sweet & Spicy Samba Pork Tenderloin
Maybe it’s salsa to you – but it’s extra zesty and free for me – SAMBA!!!!
Less structured:
Salsa music is more structured than Samba and because of that, the music selection is more consistent in beat and style. In summary, both Samba and Salsa are a combination of African and European dances. Traditional Samba originated from Brazil and can be danced solo or with a group of individuals.
Sam’s Fresh Salsa – Pineapple Mango Salsa – makes an appearance again.
This time it’s served over a perfectly roasted pork tenderloin (I mean PERFECT!) and avocado smash.
You’ll be in salsa-samba-dancing heaven with every single bite!
Sweet & Spicy Samba Pork Tenderloin
Pork Tenderloin:
2 lb. pastured pork tenderloin
1 Tbs. olive oil
sea salt and pepper
Avocado Smash*
2 cups Sam’s Fresh Salsa – Mango Pineapple Salsa
Bring the tenderloin to room temperature.
Thoroughly rub the tenderloin with olive oil and salt and pepper, covering all surfaces.
Preheat oven to 500 degrees.
On a parchment lined baking tray, uncovered, roast the loin for 20 minutes.
Keep the oven door closed!
No matter what, keep that sucker closed.
Turn off the oven and continue to “cook” for 50-60 more minutes.
This is tricky…the door MUST stay closed, but you’ll have to judge when to remove the little loin. 50 or 60 minutes. The key is to allow for the pork to reach an internal temperature of 165, but not to dry out. Opening the door will interfere with the moist cooking process ~ so good luck!
No really, it’s not that difficult. For 2 lb. of pork, a high heat 500° F oven for 20 minutes, plus an “off” oven for 55 minutes is pretty great.
Once the pork is crusted and done, remove from the oven, tent with foil, and allow to “rest” about 10 minutes before slicing and serving with the Avocado Smash and fresh salsa.
*Avocado Smash:
2 ripe avocados, halved, pitted and skins removed
1/4 cup fresh cilantro
2 Tbs. red onion, diced
1 fresh jalapeƱo, seeded and roughly chopped
juice and zest of 1 fresh lime
2 cups water
2 Tbs. white vinegar
1 tsp. sea salt
freshly ground black pepper
Combine all ingredients in a high-speed blender and whir until smooth.
Slice the pork and serve over gobs of Avocado Smash and topped with Sam’s Fresh Salsa.
Garnish with freshly ground pepper.
