Chocolate Peppermint Bark Cookies
The enticing aromas, texture, and seasonal pull of chocolate peppermint bark – baked into a soft and fluffy cookie are what make these holiday homemade cookies the number one most coveted at this year’s neighborhood cookie exchange.
Peppermint bark is a chocolate confection. Generally, it consists of peppermint candy pieces, such as candy canes, in white chocolate on top of dark chocolate, but peppermint bark can refer to any chocolate with peppermint candy pieces in it. It is especially popular around the Christmas season.

Chocolate Peppermint Bark Cookies
10 Tbs. butter or shortening, room temperature
14 oz. sweetened condensed milk
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. sea salt
2 cups all-purpose flour
8-9 oz. Ghirardelli Chocolate Peppermint Bark Squares, chopped into small pieces
Preheat the oven to 350 degrees.
Using a stand mixer (or hand-held), beat together the softened butter, sweetened condensed milk, vanilla, baking soda and powder, and salt (easy, peasy).
Next, once creamy, add the flour 1/2 cup at a time, until well combined.
Fold in the Chocolate Peppermint Bark Squares, chopped in pieces.
Line cookie sheets with parchment paper and scoop 1″ round balls of dough onto the sheets. flatting and forming little discs.
Bake for 12-13 minutes, until starting to brown.
Remove from oven and cool for 10-15 minutes before serving with hot cocoa, hot coffee drinks, or just on their own!!!
