Keto Cilantro Lime Chicken & “Grits”

Made with a combination of unblanched almond flour and a little coconut flour, these tasty grits are the perfect low-carb, Keto accompaniment to a perfectly flavored Cilantro Lime Chicken.

Keto Cilantro Lime Chicken & “Grits” 

1 pkg. Kevin’s Natural Food Cilantro Lime Chicken
1 red chili pepper, seeded and finely chopped
fresh cilantro, for garnish
3/4 cup unblanched almond flour (coarsely ground)
1/4 cup coconut flour (coarsely ground)
1 cup chicken broth or water + 1 1/2 tsp. bouillon paste
2 Tbs. butter
1/4 cup whipped cream cheese
sea salt and freshly ground pepper

 

Combine the almond flour, coconut flour, broth, and butter in a medium pot.

 

Bring to a rolling boil.

 

Reduce to a simmer and continue stirring, constantly, until the liquid has completely absorbed. 

 

Add a little additional liquid, if it feels too stiff.

 

Stir in the cream cheese, and plenty of salt and pepper.

 

Remove from heat.

 

Meanwhile, in a separate pot, combine Kevin’s Natural Cilantro Lime Chicken and sauce with almost all of the red chili pepper (reserving some for garnish).

 

Heat over medium heat until simmering.

 

To serve, scoop the “grits” onto each serving plate and top with the Cilantro Lime Chicken.

 

Sprinkle with remaining red pepper and fresh cilantro.
