Mac N’ Cheeseballs




Who doesn’t love Mac N’ Cheese?


The answer is NO ONE!


And, cooked into a hot little, crunchy bite, the love affair only becomes more intense.

 

These Mac N’ Cheeseballs are a fun and easy recipe that the kids and guests (and YOU) will all love. It’s super cheesy and absolutely one of my faves. 

 

No need for spoons with this mac dish! It’s party time!

 

These Mac N’ Cheeseballs are super crispy and crunchy on the outside, but also so creamy, cheesy, and truly delightful on the inside – they are perfect for any and every occasion! (And the fresh, green chives truly make the presentation – don’t neglect this garnish!)





Mac N’ Cheeseballs 

1 1lb. macaroni elbows
2 Tbs. butter
1/2 cup whole milk
1 cup white cheddar cheese, roughly grated
1 cup yellow cheddar cheese, roughly grated
1 cup pimento cheese spread
sea salt and freshly ground pepper
2 cups all-purpose flour
2 large egg, whisked
2 cups Ritz cracker crumbs
3 cups canola oil, for frying
fresh chives
fresh pepper

 

Bring a large pot of hot water to a boil. Add the macaroni noodles and bring back to a boil.


Reduce heat to a simmer, stirring occasionally and cooking until mostly soft.
Drain the water.


Add the butter, milk, cheese, and cheese spread. Stir well. Melt all cheeses over low heat, adding sea salt and plenty of fresh ground pepper.

 

Remove from heat. Transfer to a large bowl and chill overnight.

 

Form the cooled, homemade mac n’ cheese into 2″ sized, tightly rolled balls.

 

Create 1 bowl full of flour, another full of whisked egg, and a final bowl full of Ritz cracker breadcrumbs.

 

Dredge each ball in the flour, followed by coating in the egg, and then fully coating in Ritz crumbs.

 

Once the balls are ready to fry, heat a large, deep cooking vessel with canola oil on high.


Carefully place each ball in the frying oil. Simmer for 3-5 minutes. Then, carefully using tongs, rotate and fry the opposite side. 


Once cooked, transfer to a paper towel-lined plan, to allow any excess oil to drain.

Repeat with any excess cheeseballs that have not yet been fried, as you don’t want to crowd the frying pan.

 

Top with freshly chopped chives and freshly ground pepper.
